This recipe is so quick and easy that you’ll want to make it all the time! It is a delicious way to still enjoy those amazing Mexican flavors during the cold winter months without farm-fresh Corn on the Cob. With my Perfectly Imperfect ingredients this dish is a healthier version of the original, plus can be Vegan as well. And as always, finish it how you like – whether as a taco, a big salad, or wrapped up like a burrito – and make it your own!!
PREP TIME: 5-10 minutes
COOK TIME: 10-15 minutes

ingredients
- 1 head Cauliflower (chopped into bite-sized pieces)
- 2 TBSP Avocado Oil*
- 1/2 TSP each: Paprika, Cumin, Chili Powder, Garlic Powder
- 1/4 cup Mayonnaise**
- 1/4 cup Greek Yogurt (with 1 TBSP Lemon juice) or Sour Cream***
- juice 1 Lime
- 3/4 cup crumbled Queso Fresco (I used Manchego – grated and finely chopped)****
- handful Cilantro (chopped)
- Salt and Pepper to taste

- Black Beans (drained and rinsed)
- Lettuce (shredded)
- Avocado (cubed)
- Tomatoes (sliced)
- Salsa/Hot Sauce
- Jalapenos (sliced)
- Tortillas
- extra Lime
*I always use Avocado Oil as a healthier alternative to other high heat oils like Canola or Vegetable. Olive Oil can be used as well.
**I use Avocado Oil Mayo but still has eggs so substitute Vegan Mayonnaise if needed.
***Greek Yogurt is a healthier alternative to Sour Cream, and the Lemon juice will give it the same flavor! If you prefer the original, please use that instead – it’s only 1/4 cup 🙂 Vegan Sour Cream can be found in most grocery stores as well … or make your own Here!
****If you don’t want to use Queso Fresco or the traditional Cotija Cheese, Feta, Pecorino Romano, or Manchego can be substituted. Those cheeses are Sheep’s Milk and will give the same delicious and salty flavor. For Vegans, crumble some Tofu with Lime or Lemon juice or Olive brine and Salt and Pepper/ use your favorite crumbly Plant-based Cheese/ or make your own Here (not my recipe.)

- Cover Broiler pan with Aluminum Foil and spread out Cauliflower evenly. Drizzle with Oil and toss with all the Spices and Salt and Pepper.
- Place the pan under the flame and broil for about 10-15 minutes, or until the Cauliflower is evenly charred. Make sure the pan is about 5 inches from the flame.
- Mix together the Mayo, Yogurt or Sour Cream, Lime juice, half the Cheese and Cilantro, and Salt and Pepper in a medium sized bowl.
- Stir in the Cauliflower and coat completely. Top with the rest of the Cheese, Cilantro, and more Lime if desired.
- For Bowls: layer Beans, Cauliflower, Avocado, Tomatoes, Lettuce, etc.
- Serve with Tortillas of your choice and ENJOY!!!
