Roasted Vegetables with Sausage and Farro

Farro is a very healthy and wonderful ancient grain. It can definitely be found in larger grocery store chains, but if you can’t find it, any hearty grain will be delicious in this dish as well (Barley, Lentils, Couscous, etc.) This Perfectly Imperfect recipe is easy to make, super tasty, and can be eaten hot or at room temperature!!


PREP TIME: 5 minutes

COOK TIME: 30-35 minutes

SERVINGS: 4-6

ingredients

  • 1 cup Farro
  • 3 cups Water
  • 1 Bell Pepper (thickly sliced)
  • 1 8oz package of Mushrooms (cut in half)
  • 1 Onion (sliced)
  • 1/2 lb Asparagus (chopped)
  • 1/2-1 cup Tomatoes
  • 1 TBSP Avocado Oil*
  • 3 thick Sausages (cut into 1/2 pieces)**
  • 1 cup Balsamic Vinegar
  • 1 TBSP Oyster Sauce or Maple Syrup (optional)
  • 1/2 cup Feta Cheese***
  • Squeeze of Lemon (optional)
  • 1/2 TBSP Fennel Seeds or 1/2 TSP Fennel Pollen (optional)****
  • Salt and Pepper to taste

*Avocado Oil is a healthier alternative to other high heat oils like Canola or Vegetable, but use whatever you prefer.

*Any sausage can be used here (Chorizo, Hot Italian, Plant-Based, etc.) I removed the casing to make it more ground, but leaving it on and just slicing it is good too. For my vegetarians, just go no sausage at all!

***Goat Cheese would be delicious as well, or no cheese if you want to be dairy free is fine as well.

****Fennel has such a great flavor and is what gives Italian Sausage it’s distinct flavor. Fennel also is really great to aid in digestion. If it’s not for you, definitely don’t add any to this recipe.

  1. Rinse Farro in a colander to remove excess starchiness. Then put in medium sized pot and add Water. Bring to boil. Then reduce heat, cover, and simmer for 30 minutes. Drain, rinse, and set aside. (It does not absorb water like rice so there will be a decent amount left when it’s done.)
  2. While the Farro is simmering, cook everything else.
  3. Toss the Vegetables in Oil, Salt and Pepper. Cover a baking sheet with Aluminum Foil and arrange the Vegetables in 1 layer. Place under the Broiler, close to the flame, and broil until nicely charred on both sides (about 20 minutes.)
  4. Saute Sausage in a pan over medium-high heat until fully cooked (about 7 minutes) and set aside.
  5. In the same pan, pour in Vinegar and Oyster sauce and bring to a boil over medium high heat. Then reduce heat to low and simmer until thick (about 10 minutes.)
  6. In a large bowl, mix Farro, Vegeatables, Sausage, Feta, Balsamic Glaze, Fennel, and Lemon. Season with Salt and Pepper to taste.
  7. Serve hot or at room temperature and ENJOY!!
