Huevos Rancheros with Warm Roasted Pepper Salsa

I love Mexican Food!!! It is typically quick and easy to make as long as you have the basic ingredients, which I try to keep on hand all the time. Huevos Rancheros or “Ranch Eggs” are basically Corn Tortillas, Beans, Eggs, Salsa, and Cheese. Hello! Sooooo good. My Perfectly Imperfect version uses my Refried Beans recipe, double the Tortillas, and a special warm Salsa. Time to take breakfast to the next level!!

 

PREP TIME: 20 minutes (making Refried Beans included)

COOK TiME: 20 minutes

SERVINGS: 2-4 (makes 4 Tacos)

ingredients

  • Refried Beans
  • 4 Eggs
  • Manchego Cheese (grated)*
  • 1 Avocado (diced)
  • Cilantro (chopped)

Salsa

  • 2 Bell Peppers (cut into quarters)
  • 1 Jalapeno Pepper (cut in half)
  • 1 TSP Avocado Oil**
  • handful of Cilantro
  • juice of 1 Lime
  • pinch Garlic Powder
  • 1/4 cup Extra Virgin Olive Oil
  • Salt and Pepper to taste

*Manchego is a mild, salty sheep’s milk cheese from Spain. It’s softer than Pecorino, which is Italian sheep’s milk cheese, but similar. Queso Fresco, Cotija, or even Feta will be delicious as well.

**Avocado Oil is a healthier alternative to other high heat oils like Canola or Vegetable, but use whatever you prefer.

instructions

  1. Make Refried Beans or re-heat and keep warm if you made them previously.
  2. Toss Peppers in Oil, Salt and Pepper. Place Aluminum Foil on broiler pan and lay Peppers in the center. Broil close to the flame until charred on both sides (about 12 minutes.)
  3. Using a small mixer, blender, or food processor, add all the Salsa ingredients and pulse until smooth. Set aside.
  4. Spray a pan with Cooking Spray and fry Eggs until Sunny Side Up (the whites should be cooked completely and the yolks should remain runny.) Season with Salt and Pepper.
  5. Heat the Tortillas, 2 at a time, over an open flame. They will only take about 10 seconds each side. Watch them carefully or they will burn very quickly.
  6. Build your Tortillas. Lay a few spoonfuls of Beans on the bottom Tortilla and cover with another Tortilla and 1 spoonful of Beans. Then add the warm Salsa. Next top with grated Cheese, Avocado, and 1 Egg.
  7. Serve with more Cilantro and ENJOY!!
