This recipe is healthy and delicious, but also comfort food at its best. It is Perfectly Imperfect to serve as a main dish or as an elegant accompaniment with sliced sirloin or roasted chicken. No matter how you prepare it, this dish will warm your soul and fill your belly!!
PREP TIME: 5-10 minutes
COOK TIME: 45-55 minuts
SERVINGS: 4 (as a main) 6-8 (as a side)
ingredients
6 cups Water (salted)
2 cups Polenta*
3 TBSP Butter**
1/2 cup Parmesan or Pecorino Cheese (grated)
2-3 cups Spinach
4 oz/ 1 log Goat Cheese
Fresh or Dried Thyme
Salt and Pepper to taste
MUSHROOM SHERRY SAUCE
2 TBSP Butter**
2 8oz packages of Mushrooms (sliced)
1 Onion (chopped)
3 Garlic Cloves (minced)
1 cup Stock (Beef or Vegetable)
1/2 cup Sherry
2 TBSP Cornstarch mixed with 2 TBSP Water
Salt and Pepper to taste
*If you want to save time, use an instant Polenta or one that is very milled and doesn’t require 30-40 minutes of stirring.
**I always use Country Crock Avocado Butter. It is a healthier option than regular butter and cooks exactly the same.

Preheat oven to 375 degrees.
Make the Polenta.Boil6 cups of salted Water in a large pot. Stir in Polenta and continue to stir as instructed on package. Add Butter and grated Cheese and stir to combine. Season with more Salt and Pepper to taste. Spread out evenly in a large baking dish.
Melt Butter in a large pan over medium-low heat and addOnion. Saute 3-5 minutes. AddMushrooms and saute another 3 minutes. Add Garlic and Seasonwith Salt and Pepper. Saute another minute.
Pour in the Stock and Sherry. Increasethe heat to high and bring to a boil. Reduce heat and simmer for about 3 minutes. Stir in the Cornstarch slurry and simmer another 2 minutes to thicken.
Top Polenta with the Spinach. Then pour on the Mushroom Sherry sauce. Addglobs of Goat Cheese over the whole dish. Then bake for 20 min.
Before serving, garnish with Thyme, Sea Salt, and Cracked Pepper. ENJOY!!
