For a fraction of the cost of buying the ingredients at another grocery store, this Perfectly Imperfect recipe was made with only things I purchased from Aldi. It is absolutely delicious, requires less than 5 minutes to prepare, and can be on the table in 30 minutes. This dish is 100% restaurant quality food at home and will have your family licking their plates!
PREP TIME: 5 minutes
COOK TIME: 25 minutes
SERVINGS: 4-6
ingredients
- Pasta of your choice (I used Fettuccine)
- 2 TBSP Olive Oil
- 1 small Onion (diced)
- 2-3 Anchovies (optional)*
- 1 TSP Chili Pepper Flakes
- 4 Garlic Cloves (very thinly sliced)
- 1/4 cup Sherry (I had some on hand)**
- 1 container of Cherry or Grape Tomatoes
- 1 1/2 jars Rosso Pesto Sauce
- 2 bags Mixed Seafood
- Parsley
- juice and zest of 1 Lemon
- Salt and Pepper to taste
*Anchovies aren’t typically available at Aldi so unless you have them on hand they can be omitted. Make sure to generously season with Salt if not using them.
**If your Aldi doesn’t sell wine, you can use Chicken or Vegetable Stock instead, or even 1-2 TBSP of Sherry or Red Wine Vinegar. Instead of Sherry, a 1/4 cup of Red or White Wine can be substituted as well.
instructions
- Bring a large pot of Water to boil. Cook the Pasta 1-2 minutes under the package instructions and drain (reserving 1 cup of the Pasta Water.)
- Heat Oil in a large pan over low heat. Add Onions, Garlic, Anchovies, and Pepper Flakes. Saute for about 5-6 minutes.
- Increase the heat to medium-high and deglaze the pan with Sherry. Reduce the liquid for 2 minutes. Then add in the Tomatoes and saute another 2-3 minutes. Stir in the Pesto Sauce and simmer for about 2 minutes. Taste and season if necessary.
- Add all the Seafood into the pan and continue to simmer 3-4 minutes (or until the Seafood is heated through.) Stir in the Pasta and some of the Pasta Water to bring it all together.
- Season with Salt and Pepper and garnish with Parsley and Lemon. ENJOY!!
