Balsamic Glazed Mushroom and Tomato Sandwich

This Perfectly Imperfect Sandwich is not only hot and delicious, but ready in less than 10 minutes. The richness of the balsamic glazed mushrooms paired with the tangy goat cheese is a winning combination that will have you making this sandwich all season long!!


PREP TIME: < 5 minutes

COOK TIME: 10 minutes

SERVINGS: 2 Sandwiches

ingredients

  • 1 TBSP Olive or Avocado Oil
  • 1 8oz package of Mushrooms (sliced)
  • 2 Garlic Cloves (minced)
  • 1 cup Cherry or Grape Tomatoes
  • 1/4 cup Balsamic Vinegar
  • 2 cups Spinach
  • Salt and Pepper to taste
  • Fresh or Dried Thyme
  • 2 oz Goat Cheese (1/2 small log)
  • Extra Virgin Olive Oil (optional)
  • Sandwich Roll/Bread

instructions

  1. Heat Oil in pan over medium heat. Add Mushrooms and saute about 2-3 minutes.
  2. Add Garlic and cook another 1 minute. Add Tomatoes and Balsamic Vinegar. Increase heat to medium high and saute for about 3-4 minutes (or until the Balsamic has reduced.)
  3. Stir in Spinach and wilt for about 30 seconds. Top with a good sprinkle of Thyme and Season with Salt and Pepper.
  4. Place the Vegetables on each Roll and top with Goat Cheese and a drizzle of Extra Virgin Olive Oil. ENJOY!!
