Crispy Brussels Sprouts with Hollandaise Sauce

My family loves Brussels Sprouts so we eat them regularly. However this Perfectly Imperfect recipe is a delectable way to serve these vegetables for a special occasion…like Thanksgiving! Hollandaise sauce is so rich and wonderful and certainly should not be strictly used to top eggs on muffins. It will jazz up other vegetables, like asparagus and broccoli, and get even picky kids to eat their vegetables!!


PREP TIME: 5 minutes

COOK TIME: 20 minutes

SERVINGS: 4-6

ingredients

  • 2 TBSP Avocado Oil*
  • 2 lbs Brussels Sprouts (bottoms cut off and sliced in half)
  • 1/4 cup Butter**
  • 4 Egg Yolks
  • 4 TBSP hot water
  • juice of 1/2-1 lemon
  • Salt and Pepper to taste

*Avocado Oil is a healthier alternative to Canola or Vegetable Oils for high heat cooking, but use what you have on hand.

**I used a plant-based butter for my recipe (Almond Oil butter) and it still tastes great! So if you are dairy free you can still enjoy this Hollandaise 🙂

instructions

  1. Heat a large pan over medium-high heat. Add Oil. Add in Sprouts, season with salt and pepper, and saute until crispy (about 10-12 minutes.)
  2. OPTIONAL: Splash in some stock at the end and cook for another minute. This will soften the Sprouts and have them cooked perfectly.
  3. Melt Butter in a small sauce pan.
  4. Crack Egg Yolks into a small bowl and whisk together. Once the Butter is melted, SLOWLY whisk it into the Yolks. You must continuously whisk to prevent the eggs from scrambling.
  5. Add the Yolk mixture back to the sauce pan and turn the heat to low. Keep whisking while the sauce begins to thicken (1-2 minutes.) Once it has thickened to your liking, remove the pan from the heat and pour it back into the bowl using a spatula.
  6. Add the hot water 1 TBSP at a time and whisk to mix. Then add juice from 1/2 Lemon. Season with salt and pepper. Add more Lemon juice if you need.
  7. Serve warm over your Brussels Sprouts or on the side as a dipping sauce. ENJOY!!

I enjoyed mine on Naan bread with some Prosciutto and the sauce drizzled on top!
