Dairy-Free, Gluten-Free Chocolate Chip Cookies

It is hard to believe that these cookies have no flour or butter and only 4 ingredients! They are Perfectly Imperfect, crazy delicious and super moist. Vegan never tasted so good!! 

*I made the cookies totally Vegan as well as Dairy and Gluten Free with an egg and included photos of both.


PREP TIME: 5 minutes

BAKE TIME: 15 minutes

MAKES 12 COOKIES

ingredients

  • 1 cup Almond Butter*
  • 3/4 cup Sugar or Sugar Substitute
  • 1 Egg or Chia Egg**
  • 1/4-1/2 cup Chocolate or Carob Chips

*Cashew Butter or Peanut Butter are delicious as well.

**To make the Chia Egg: Add 1 TBSP of Chia Seeds to 3 TBSP of Water and let it sit in a bowl for about 5 minutes to gel.

  1. Preheat oven to 350 degrees.
  2. Mix Almond Butter, Sugar, and Egg in a large bowl. (Keep stirring with a spoon until it is no longer super sticky.)
  3. Fold in Chocolate Chips.
  4. Form into 12 balls or spoonfuls and place on a cookie sheet. (Lay Parchment paper down first and you won’t have to use spray or clean it!)
  5. Bake for 15 minutes.*
  6. Let cookies cool on the cookie sheet for 10 minutes before moving to cooling rack.
  7. ENJOY!!

*If you make the cookies with the Chia Egg, bake them for 20 minutes.
