Hot and Sour is my favorite Chinese Restaurant soup – especially the heat! My Perfectly Imperfect recipe has no meat or tofu, but extra vegetables to make it extra healthy and just as delicious. A big pot of nutritious soup is essential during these times of quarantine, especially when trying to keep your immune system strong!!
PREP TIME: 5 minutes
COOK TIME: 30 minutes
SERVINGS: 6

ingredients
- 1 TSP Sesame Oil
- 3 Garlic Cloves (grated)
- 2 TSP Ginger root (grated)
- 4 Scallions (green parts chopped, and white parts left whole)
- 1/4 cup Rice Wine Vinegar
- 1/4 cup Soy Sauce
- 1-2 TSP Chili Paste/Sauce*
- 8 cups Stock (Chicken or Vegetable)
- 8 oz package Mushrooms (sliced)
- 1/4 head Cabbage (shredded)**
- 1/4 cup Cornstarch
- 2 Eggs (whisked)


*The Chili Paste/Sauce is what gives the heat so use as little or as much as you like. I used Red Curry Paste which has wonderful flavor but not a lot of spice, so I added a few TBSP of Chili Flakes and the heat was perfect! Sriracha Sauce is the best (in my opinion) to use here.
**Cabbage is not a typical ingredient in this soup but I think it is a great addition. Shredded Pork or Chicken and Tofu are traditionally added so if you have them, put them in for sure!

instructions
- Add Oil, Ginger, Garlic, and only the white parts of the Scallions to a large pot. Turn heat to low and saute for 1-2 minutes or until fragrant. Be careful not to let the Ginger or Garlic burn.
- Add Vinegar, Soy Sauce, and Chili Paste. Stir to combine for about 1 minute. Pour in Stock and increase heat to high. Bring to boil.
- Reduce heat to low and simmer for 5 minutes. Remove Scallions.
- In a small bowl mix Cornstarch with 1/4 cup of Water until smooth and pour into soup. Stir. Increase heat to medium and add Mushrooms and Cabbage. Cook for about 7 more minutes, or until the mushrooms are soft.
- Swirl the soup in 1 direction with a large spoon to create a “hurricane”. Slowly pour in the Eggs and continue to swirl. This will make the Eggs have that “shredded” appearance.
- Top with the remaining Scallion partsĀ and another drizzle of Sesame Oil and Enjoy!!
