Greek Style Rice with Roasted Vegetables

This Perfectly Imperfect recipe may seem like nothing special but the flavors are amazing! The ingredients are traditional in Mediterranean cuisine and together create such a delicious meal. By substituting Plant-based Sausage and Vegan Mayonnaise, you can serve up a wonderful Vegan dinner that is both comforting and nutritious!!


PREP TIME: 5-10 minutes

COOK TIME: 20 minutes

SERVINGS: 4-6

ingredients

  • 1 cup Rice*
  • 1 1/2 cups Stock**
  • 2 cups Cherry/Grape Tomatoes
  • 1 Red Onion (quartered)
  • 1-2 Bell Peppers (thick slices or just the stems removed)
  • 2 TBSP Avocado Oil or equivalent high heat Oil
  • 2 Sausages (sliced or casing removed)***
  • 1 can Chickpeas (drained and rinsed)
  • Salt and Pepper to taste

Cucumber Sauce

  • 1/4 cup Mayonnaise****
  • 1/2 Avocado
  • 1/2 cucumber (grated)
  • 1-2 TSP Dill (fresh or dried)
  • juice of 1 Lemon
  • Salt and Pepper to taste

Extras

  • Kalamata or Cured Greek Olives (finely chopped)
  • 2-3 oz Feta Cheese (plant-based or traditional)
  • more Dill

*I used Jasmine Rice but feel free to use whatever Rice you like.

**Use Chicken Stock unless you want to make this dish Vegetarian/Vegan and then use Vegetable Stock.

***Again, use your favorite Sausage here or a Plant-based version to keep the recipe Vegetarian/Vegan.

****You can substitute Greek Yogurt or even Sour Cream here or use a Plant-based Mayonnaise as well.

instructions

  1. Make the Rice. Follow the instructions on the package, but use Stock instead of water for extra flavor.
  2. Place Aluminum Foil on a broiler pan and evenly lay Onions, Peppers, and Tomatoes on it. Drizzle with Oil, Salt and Pepper. Place the pan on the top shelf closest to the Broiler, and broil for 12-15 minutes. Stir/Flip the Vegetables about halfway through and remove the Tomatoes before they begin to burst (which will be before the others are done.)
  3. Heat a large pan over medium high heat and add in Sausage. Saute for about 5 minutes, then add in the Chickpeas, and cook another 3-5 minutes.
  4. In the mean time, make the Sauce. Add all ingredients into a bowl and mash/stir until smooth.
  5. When the Rice is done, pour in the Sauce and stir to combine. 
  6. Remove the Vegetables to a cutting board and chop them into more bite sized pieces. (I like to do this at the end so they char more evenly under the broiler.)
  7. Add the Rice mixture, Vegetables, Sausage and Chickpeas, Olives, and half your Feta Cheese into a large bowl. Stir to combine. Season with Salt and Pepper to taste.
  8. Garnish with the rest of the Feta and Dill. ENJOY!!
