Sometimes there is nothing more satisfying than a hot bowl of homemade Chicken Soup! This Perfectly Imperfect recipe is simple, ready in 30 minutes, and is absolutely food for the soul!!
PREP TIME: 5-10 minutes
COOK TIME: 25-30 minutes
SERVINGS: 6
ingredients
- 2 TBSP Avocado Oil*
- 1 Onion (finely chopped)
- 3 Carrots (finely chopped)
- 2 Celery Stalks (chopped)
- 3 Garlic Cloves (minced)
- 3 cups Chicken or Turkey (cubed)**
- 8 cups Chicken Stock
- 1 TSP Thyme
- 2-3 cups Egg Noodles
- juice of 1 Lemon
- 1 TSP Cornstarch
- Salt and Pepper to taste
- 1/4 TSP Tumeric (optional)***
- 1 TBSP Miso Paste (optional)****
*I use Avocado instead of Vegetable or Canola Oil as a healthier option. But use what you have on hand.
**My secret to this recipe is that I used a roasted Turkey Breast! I think Turkey is more flavorful and much juicier than Chicken breast – plus it’s already cooked ($5 from Aldi’s!) However, use Chicken breast if you prefer and just make sure it cooks thoroughly before serving.
***Tumeric adds a beautiful color to the soup and extra health benefits, too.
****Miso Paste is something I add to all of my soups. It gives an Umami, rich flavor without changing the taste. I recommend keeping it on hand for a variety of recipes!
instructions
- Heat Oil in a large pot over medium-low heat. Add in Onion, Carrots, and Celery, and season with Salt and Pepper. Saute until Carrots and Onions begin to caramelize (about 10 minutes.)
- Add Garlic and cook another minute.
- Pour in Stock and add Turkey (or Chicken) and Thyme. Increase heat and bring to a boil. Then reduce heat to low and simmer about 5 minutes.
- Add in Noodles and simmer another 5 minutes.
- Mix Lemon juice and Cornstarch in a small bowl and add to soup with Tumeric and Miso Paste if using them.
- Stir until everything is combined and ENJOY!!
