Hearty Chicken Noodle Soup

Sometimes there is nothing more satisfying than a hot bowl of homemade Chicken Soup! This Perfectly Imperfect recipe is simple, ready in 30 minutes, and is absolutely food for the soul!!


PREP TIME: 5-10 minutes

COOK TIME: 25-30 minutes

SERVINGS: 6

ingredients

  • 2 TBSP Avocado Oil*
  • 1 Onion (finely chopped)
  • 3 Carrots (finely chopped)
  • 2 Celery Stalks (chopped)
  • 3 Garlic Cloves (minced)
  • 3 cups Chicken or Turkey (cubed)**
  • 8 cups Chicken Stock
  • 1 TSP Thyme
  • 2-3 cups Egg Noodles
  • juice of 1 Lemon
  • 1 TSP Cornstarch
  • Salt and Pepper to taste
  • 1/4 TSP Tumeric (optional)***
  • 1 TBSP Miso Paste (optional)****

*I use Avocado instead of Vegetable or Canola Oil as a healthier option. But use what you have on hand.

**My secret to this recipe is that I used a roasted Turkey Breast! I think Turkey is more flavorful and much juicier than Chicken breast – plus it’s already cooked ($5 from Aldi’s!) However, use Chicken breast if you prefer and just make sure it cooks thoroughly before serving.

***Tumeric adds a beautiful color to the soup and extra health benefits, too.

****Miso Paste is something I add to all of my soups. It gives an Umami, rich flavor without changing the taste. I recommend keeping it on hand for a variety of recipes!

instructions

  1. Heat Oil in a large pot over medium-low heat. Add in Onion, Carrots, and Celery, and season with Salt and Pepper. Saute until Carrots and Onions begin to caramelize (about 10 minutes.)
  2. Add Garlic and cook another minute.
  3. Pour in Stock and add Turkey (or Chicken) and Thyme. Increase heat and bring to a boil. Then reduce heat to low and simmer about 5 minutes.
  4. Add in Noodles and simmer another 5 minutes.
  5. Mix Lemon juice and Cornstarch in a small bowl and add to soup with Tumeric and Miso Paste if using them. 
  6. Stir until everything is combined and ENJOY!!
