Italian Style “Croque Madame”

A Croque Madame is a French sandwich traditionally made with French Ham, Gruyere Cheese, a running egg, and Bechamel Sauce on thick bread. It is fantastic but very rich and indulgent. This is a Perfectly Imperfect recipe with Italian flavors of Rosemary and Prosciutto. Here comes the best part….It’s Dairy-Free. Oh, and absolutely delicious!!


PREP TIME: < 5 minutes

COOK TIME: 10-15 minutes

SERVINGS: 2 (1 sandwich per person)

ingredients

  • 2 Ciabatta Rolls*
  • 6 slices Prosciutto**
  • 1-2 slices of your favorite Non-Dairy/Vegan Cheese***
  • 2 TBSP Plant-Based Butter (Country Crock with Avocado Oil)****
  • 2 TBSP Fresh Rosemary or 1 TBSP Dried Rosemary
  • 3 TBSP Flour
  • 2 cups Plant-Based Milk (Unsweetened Original Oat Milk)*****
  • 1/4 TSP Dijon Mustard
  • pinch of Nutmeg
  • 2 eggs
  • Salt and Pepper to Taste

*You can also get a loaf of Ciabatta, slice it in half and create sandwich size slices that way. Also, Thick Italian Bread, Sourdough or Texas Toast can be used as well.

**Any kid of Ham can be substituted for Prosciutto – Black Forest, Country-style, Honey, Iberico, Speck, etc.

***I used a Semi-soft Sheep Milk’s Cheese. Sheep milk has very little/no lactose so if that it your concern, always remember that Sheep Cheese may be an option for you. Otherwise, Vegan Cheese is the best option here.

****I have tried many different Plant-Based butters and I really like the new ones by Country Crock. Avocado Oil based choices are my favorite as well. 

*****I would stay away from Soy Milk in this recipe because it tends to make the Bechamel taste pretty off. Oat, Almond, Cashew or Pea Protein Milks have less of their own flavor and will make the dish taste more authentic.

instructions

  1. Slice the Ciabatta Rolls in half. Place 3 slices of Prosciutto on the bottom half or each sandwich. Then top with a few slices of Cheese.
  2. Place in the toaster. If your toaster has a “broiler” setting, use that and broil for 10 minutes (or until the Bread has toasted and the Cheese has melted.
  3. Spray some non-stick cooking spray in a small pan and cook your eggs until the whites are solid and the yolk is still nice and gooey (Sunny-side up).
  4. While the eggs are cooking, melt the Butter in a small saucepan over medium heat. Add in the Rosemary and stir. Then whisk in the flour and saute for about 1-2 minutes.
  5. Pour in the Milk and whisk until smooth. Add Dijon Mustard and Nutmeg. Increase the heat to high and bring to a boil.
  6. Once boiling, reduce the heat to low and simmer for about 2 minutes while continually whisking. Season with Salt and Pepper.
  7. Pour a few spoonfuls of the Bechamel over the Prosciutto and Cheese, then add your egg and more Bechamel. Place the top of the Roll on top with more Bechamel sauce.
  8. Slice in half and serve with a knife and fork. Enjoy!!
