Lebanese Breakfast Pizza

This Perfectly Imperfect recipe combines two of my favorite things: breakfast and homemade pizza! I love trying out different Naan Bread Pizza combinations and this one is definitely going to be a staple in my house. It has such great flavor combinations…salty, briny, sweet, and savory with a bit of citrus too. Add runny eggs to that and I’m in heaven!!


PREP TIME: < 5 minutes

COOK TIME: 5 minutes

SERVINGS: 1 individual pizza

ingredients

  • 1 piece Naan Bread
  • 2 0z Goat Cheese (thinned out with Milk and Lemon Juice)*
  • Cherry or Grape Tomatoes
  • 1 cup Spinach or another Leafy Green
  • Cooking Spray
  • 2 Eggs
  • Crumbled Feta Cheese
  • zest from 1/2 Lemon
  • Fresh Parsley (chopped)
  • 1 – 2 TSPS Za’atar Spice (depending on how much you love it)**
  • Extra Virgin Olive Oil
  • Salt and Cracked Pepper to taste

*You certainly can just smear on the Goat Cheese, but I wanted to make it more of a sauce. I whipped 1 TBSP Milk (Oat Milk) and 1 TSP Lemon Juice with the Goat Cheese, Salt and Pepper in a mixer until it was smooth. Then it was easy to pour right over the Naan Bread.

**I’m obsessed with Za’atar Spice! It has a wonderful blend of herbs and Sumac, which gives it a Lemony flavor. This is why the Pizza is “Lebanese.” If you don’t have Za’atar you can make it!

  • 2 TBSP Oregano
  • 2 TBSP Sumac (or zest of 1 Lemon)
  • 2 TBSP Sesame Seeds
  • 1 TBSP Marjoram
  • 1 TBSP Thyme
  • 1 TSP Salt

instructions

  1. Heat 1 TSP high heat Oil in a pan. Saute Tomatoes until they begin to blister (about 2 minutes.) Then add in the Spinach and cook another minute to wilt it down.
  2. Coat a small pan with Cooking Spray and heat over medium heat. Crack in the Eggs. Cook until the whites are cooked through but leave the Yolk runny (about 2 minutes.)
  3. If you have a Gas Stove, turn on a burner on medium high heat. Char the Naan Bread right over the flame for about 45 seconds, flipping and rotating often to prevent burning. *If you have an Electric Stove you can put the Naan under the broiler or in a Toaster Oven to get warm and crispy.
  4. Pour the Goat Cheese sauce on the Naan first. Then add the Spinach and Tomatoes. Top with the Eggs, Feta, Lemon Zest, Parsley, and Za’atar Spice.
  5. Garnish with a drizzle of Extra Virgin Olive Oil and the Salt and Pepper. Slice and ENJOY!!
