Mediterranean Turkey and Rice

This recipe is a Perfectly Imperfect 1-pan meal!! I love a great dish that also comes with easy clean up. The ground Turkey and rice fill your belly with a comfort feeling, and with the lemon and dill, your taste buds will be excited too. So easy, no mess, and super delicious!!


PREP TIME: < 5 minutes

COOK TIME: 25-30 minutes

SERVINGS: 4

ingredients

  • 1 lb lean ground Turkey (I used 92% lean)*
  • 1 Onion (chopped)
  • 3 Garlic Cloves (finely chopped)
  • 2 TSP Dill**
  • 1 bag fresh Spinach
  • 1 cup Rice***
  • 2 cups Stock (any kind you like)
  • 1 TBSP Butter****
  • juice from 1/2 Lemon
  • zest from 1/2 Lemon
  • 2 oz Goat Cheese or Feta (1/2 log or small container)
  • Salt and Pepper to taste
  • 1 bunch Cilantro (chopped)*****
  • chopped Scallion/green onion (optional)

*Any kind of ground meat could be used for this recipe – Chicken, Beef, Pork, or even Lamb would be great.

**If you are using fresh Dill, chop about 2 TBSP.

***I used regular Brown Rice (which took longer than 20 minutes to cook) but White, Jasmine, Wild, or Basmati will be delicious – just cook for the length of time according to the package.

****This can be omitted, but it does soften the dish at the end. I actually used my favorite Plant-based Butter – Country Crock Avocado Oil!

*****Parsley can be substituted for the Cilantro or even fresh Dill. But I would recommend using one of them and not skipping out.

 

instructions

  1. Heat a large pan over medium-high heat. Add ground Turkey and season with Salt and Pepper. Saute about 5 minutes or until nicely browned.
  2. Strain out the Turkey and set aside.
  3. Turn heat to medium-low and add Onion to left over pan grease. Saute until they become soft and translucent (about 3-5 minutes.) Add Garlic and Dill to pan and cook another minute.
  4. Add Spinach. Continually stir until the Spinach wilts and mixes with the Onions (about 2-3 minutes.)
  5. Increase heat to high. Add Rice and Stock, stir, and season with Salt and Pepper. Bring to a boil. Then reduce heat to low, cover, and simmer 20 minutes (or as long as instructed on rice package.)
  6. Remove lid and stir in Butter, Turkey, Lemon juice and zest, and Goat Cheese. 
  7. Garnish with Cilantro, Scallions, and lemon wedges and Naan Bread. ENJOY!!
