Pork Jagerschnitzel

Jagerschnitzel is a German dish that is essentially a cutlet of pounded meat, breaded and fried, and served with a mushroom gravy. My Perfectly Imperfect recipe uses pork and a pan sauce to simplify things a bit. This dish takes less than an hour from start to finish, and can be served with spaetzle, egg noodles, any style of potatoes, or your favorite starch!!


PREP TIME: 10-15 minutes

COOK TIME: 30-35 minutes

SERVINGS: 4-6

ingredients

  • 3 or 4 Pork loin chops (pounded to 1/4-1/2 inch thick)*
  • 1/3 cup Flour
  • 2 Eggs
  • 1/2 cup Breadcrumbs
  • 1/4 cup Avocado Oil**
  • Salt and Pepper to taste

Sauce

  • 1/2 Onion (sliced)
  • 1 8oz package Mushrooms (sliced)
  • 2 TBSP Butter***
  • 1 TBSP Flour
  • 2 TBSP Soy Sauce
  • 2 cups Stock (Beef or Chicken)

*If you can find thin cutlets at the grocery store you can save yourself the pounding step. If not, look for center cut or America’s cut chops. When pounding, place Plastic Wrap underneath and over top the cutlets to prevent splatter.

**Avocado Oil is a healthier alternative to Canola or Vegetable Oils when cooking with high heat. But use what you have on hand.

***I have been using Country Crocks Avocado Oil Butter for everything. It’s a fantastic plant-based alternative if you’re trying to be healthier. But again, use whatever you have.

instructions

  1. Add Flour seasoned with Salt and Pepper, whisked Eggs, and Breadcrumbs to 3 separate shallow bowls/dishes/containers. Dredge each cutlet, on both sides, in the Flour, then Eggs, then Breadcrumbs.
  2. Heat Oil in a large pan over medium-high heat. Add Pork and saute for about 5-7 minutes on each side (or until nicely browned and crispy.) Then remove the Pork and set aside, leaving the Oil.
  3. In the same pan over low heat, saute the Onion for about 3-5 minutes, or until soft. Increase the heat to medium and add in the Mushrooms, season with Salt and Pepper, and cook for 3 minutes. 
  4. Melt in Butter. Stir in Flour and cook for about 1 minute. Pour in the Stock and Soy Sauce and let thicken and begin to bubble (about 3 minutes.) 
  5. Return the Pork back to the pan and cook another 4 minutes per side. 
  6. Plate Cutlets on a deep plate and cover with the sauce. ENJOY!!
