Roasted Greens Salad

This salad is so wonderful for fall and winter! It’s Perfectly Imperfect because it’s filling and delicious while incorporating unusual flavor combinations that will make you want to eat more salads. Add shrimp, chicken, steak, chickpeas, etc if you want to add protein and serve this for dinner, or even roll some up into a healthy tortilla for a hand-held wrap version!!


PREP TIME: 5-10 minutes

COOK TIME: 10 minutes

SERVINGS: 4-6

ingredients

  • 2 TBSP Avocado Oil*
  • 2 heads Broccoli (chopped into bite-size pieces)
  • 1 lb Brussels Sprouts (quartered)
  • 2 cups fresh Spinach**
  • 1 Romaine Heart (chopped)**
  • 2 cups Green Leaf Lettuce (chopped)**
  • 1 handful Parsley (roughly chopped)***
  • 1-2 cups Grapes (halved)
  • Cheese of your choice (Parmesan, Goat Cheese, Cheddar, Blue, Gorganzola, Brie)
  • Salt and Pepper to taste

Lemon Almond Dressing

*Avocado Oil is a healthier option for cooking with high heat. You can use Canola or Vegetable if that’s what you have on hand.

**Feel free to use and leafy greens you like. Kale, Arugula, Cabbage, Chard, etc will all be perfect.

***Fresh herbs are optional but a great addition. Fresh Basil or Cilantro would be a great substitution for Parsley if you prefer.

instructions

  1. Heat Oil in hot pan over medium-high heat. Add Broccoli and Brussels Sprouts. Season with Salt and Pepper and saute for about 10 minutes.
  2. Toss all greens together. Drizzle with dressing and massage the greens with your hands. Add cooked vegetables, grapes and cheese and toss again. Season with Salt and Pepper to taste.
  3. ENJOY!!
