I originally titled this “Vegetable Fajitas” but was informed that once food is placed into a tortilla it can only be called a “TACO”. It is Vegetarian and can be made Vegan as well. This Perfectly Imperfect recipe includes Refried Beans and a Creamy Jalapeno Lime Sauce that will please any crowd!

ingredients
VEGETABLES*
- 2 TBSP Avocado Oil**
- 1/2 head of Cauliflower (cut into small pieces)
- 1/2-1 8oz package Mushrooms (sliced)
- 1/4 lb Asparagus (cut into 1 in. pieces)
- 1 Onion (chopped)
- 2 Bell Peppers – I used Red and Yellow (chopped)
- 1-2 TBSP Taco Seasoning
- Salt and Pepper
REFRIED BEANS
- 1 TBSP Avocado Oil**
- 1 30oz can or 2 15oz cans Pinto Beans (drained and rinsed)
- 1 TBSP Taco Seasoning
- 1 cup Stock (Vegetable or Chicken)
- Salt and Pepper
OPTIONAL TOPPINGS
- Sliced Jalapenos
- Diced Tomatoes
- Chopped Cilantro
- Shredded Lettuce
- Shredded Cheese
- Chopped Green Onions
- Your favorite Salsa

*You can use whatever vegetables you like for this. Sqush, Zucchini, and Eggplant would also be delicious. Be creative!
**I use Avocado Oil anytime I’m cooking with high heat. Vegetable or Canola Oil can be used as well.
instructions
- Preheat broiler to highest setting
- Toss Vegetables in large bowl with Oil, Taco Seasoning, and Salt and Pepper to taste.
- Place aluminum for over baking sheet or broiler pan and arrange Vegetables on top.
- Place under broiler making sure the top shelf it close enough to the heat source that the Vegetables are only about 5 in. away.
- Broil 15-20 minutes (turning about halfway though).
- While Vegetables are cooking, add Oil to heating large saute pan. Add Beans and saute for 3 minutes over medium heat.
- Pour in Stock and increase heat to high. Bring to boil.
- Reduce heat to low, season with Salt and Pepper and simmer for about 5 minutes.
- Using a potato masher, mash the Beans until creamy (about 3-4 minutes). The liquid will continue to evaporate so turn the heat off before it thickens as much as you want so it doesn’t get too dry.
- Top Beans with shredded Cheddar or your favorite Mexican Cheese if you life.
- Serve Beans and Vegetables with Tortillas, Jalapeno Lime Sauce, and toppings of your choice. ENJOY!!
