Rotini with Shishito Peppers, Blistered Tomatoes, and Goat Cheese

With only 5 ingredients this Perfectly Imperfect recipe is a light and nutritious dinner that is an ideal choice for these hot summer days. I prepared this as a side dish to serve with a grilled Leg of Lamb and there wasn’t a bite left of either! To serve this as a main dish, I recommend adding proteins such as Grilled Chicken, Shrimp, Sausage (Plant-based or regular,) or Salmon. Since this recipe takes 15 minutes from start to finish there is no reason not to have a delicious homemade meal tonight!!


PREP TIME: < 5 minutes

COOK TIME: 10 minutes

SERVINGS: 4-6 (without/with Protein) 

ingredients

  • 1 lb Pasta (your choice)*
  • 2 TBSP Avocado Oil (or high heat equivalent Oil)
  • 12 oz – 1 lb Shishito Peppers (stems removed)**
  • 2 cups Cherry Tomatoes
  • 1-2 TBSP Extra Virgin Olive Oil
  • 2 oz (1/2 log) Goat Cheese
  • Salt and Pepper to taste

*I used Red Lentil Rotini, but you can use any Rotini of your choice. Penne, Campenelle, Cavatappi, etc are also great substitutes.

**I love Shishito Peppers because they are mild, yet are incredibly flavorful – especially when charred with Oil, Salt and Pepper. Any mild Chili, Poblano, or Bell Pepper can be used if you can’t find Shishitos. NOTE: Trader Joe’s and Whole Foods usually have them all year.

instructions

  1. Bring a pot of water to boil. Cook Pasta according to the instructions. Drain
  2. Heat Oil in a large pan over medium high heat. Add Peppers, season with Salt and Pepper, and saute about 4 minutes.
  3. Add Tomatoes and cook until they begin to blister (about 3 minutes.)
  4. Remove the Peppers to a cutting board and roughly chop.
  5. Add Peppers, Tomatoes, and Pasta to a serving bowl. Drizzle with Oil, Salt and Pepper. Toss to Combine.
  6. Top with Goat Cheese. ENJOY!!
