I am a big fan of savory breakfast food! Most recipes for Breakfast Oats will have Maple Syrup, fruit, and Brown Sugar….but I will choose Rosemary, garlic, and cheese every time. This Perfectly Imperfect dish can be made with a variety of ingredients to keep the flavors new and fresh, and adding a drizzle of hot sauce or chili oil can turn up the heat and really get you ready for the day!!

- 1/4 cup grated Pecorino or Parmesan Cheese**
- 1-2 cups Spinach***
- Salt and Pepper to taste

*Fresh or Dried Thyme can be used instead of Rosemary.
**You can substitute a good Aged Cheddar or even Feta Cheese for a sharper flavor.
**Kale or any leafy greens can be used instead of Spinach.

instructions
- Heat Oil in a pan over medium heat. Add Onions and saute for about 3 minutes. Add in Garlic and cook another minute.
- Add Oats and stir to combine. Pour in Water and stir. Increase the heat to medium-high and bring to a boil. Decrease the heat to low and simmer for about 3 minutes. (The longer it simmers the thicker it will become, so cook them to the thickness of your liking.)
- Stir in the Grated Cheese and Rosemary. Season with Salt and Pepper to taste.
- Add the Spinach and stir until wilted. Drizzle with EVOO.
- Separate into 2 bowls and top with Eggs and Chili Flakes. ENJOY!!
