Vegan Chipotle Bowl

This Perfectly Imperfect dish is a Copycat Chipotle Bowl with all Vegan ingredients! The recipe includes Cilantro Lime Rice, Black Beans, fresh Guacamole, Sofritas, and Queso Blanco. I gave each ingredient it’s own page so you can easily navigate and make things ahead of time. It’s easy to made wholesome food based on your favorite take-out spots that the whole family will love. No need to leave the house for some Chipotle during this time of Social Distancing!! #Alonetogether


PREP TIME: 15-20 minutes

COOK TIME: 30 minutes

SERVINGS: 4-6

ingredients

Cilantro Lime Rice

  • 1 cup Jasmine or While Rice
  • 1/2 TSP Garlic Powder
  • 1 1/2 cups Vegetable Stock
  • juice of 1 Lime
  • handful Cilantro (chopped)
  • Salt and Pepper to taste

Black Beans

Vegan Taco Meat (Sofritas)

Guacamole

Queso Dip

Extras

  • Salsa
  • Corn or Flour Tortillas/Tortilla Chips
  • Hot Sauce

instructions

  1. Make the Guacamole and Queso. (The Queso can be reheated when you are ready to serve, and keep the Guacamole in the fridge until ready to serve.)
  2. Make the Rice. Combine Rice, Stock, and Garlic Powder in a small pot. Follow directions on the package for cooking time. Finish with Lime juice and Cilantro and season with Salt and Pepper.
  3. While the Rice is cooking make Beans and Sofritas.
  4. Serve with Salsa, Tortillas, Hot Sauce, etc. ENJOY!!
