Vegan Mashed Potatoes

It seems impossible for mashed potatoes to be delicious without milk and butter, considering those are pretty much all the ingredients needed to make them. HOWEVER, this recipe is proof that it is possible! The Perfectly Imperfect gravy is all you need to whip up these incredible potatoes and no one at your table will be missing all the dairy!!

COOK TIME: 25 minutes

ingredients

  • 10 Potatoes (cut into chunks)*
  • 1 TBSP each Onion Powder and Garlic Powder
  • 1/4 cup Plant-based Butter**
  • 1/4 Flour
  • 2 cups Stock***
  • 2 TBSP Cashew Butter****
  • 3 TBSP Soy Sauce
  • Salt and Pepper to taste

*I like to use Red Skin potatoes and leave the skins on. Use whatever potatoes you like and peel them if you prefer a less chunky mash.

**Avocado Oil based butter is my favorite. And if you are not Vegan and just looking for a healthier version of mashed potatoes, use regular butter if you like.

***Use Vegetable Stock for a Vegan dish, but use a rich Turkey Stock if, again you are just being health conscious. 

****If you can’t find Cashew Butter already made it is super simple to do yourself. Soak 1 cup of raw Cashews in water for 10 minutes. Then puree them in a blender or mixer with a bit of Oil until it becomes a smooth paste.

  1. Bring a large pot of water to a boil. Add Garlic and Onion Powders and heavily season the water with Salt. Add Potatoes and boil until they become fork tender (about 12-15 minutes.)
  2. Melt Butter in a small sauce pan over low heat. Whisk in Flour and brown for 1-2 minutes.
  3. Pour in Stock, Soy Sauce, and Cashew Butter. Increase heat to high and bring to a boil. Then reduce heat and simmer. Whisk until smooth and the gravy thickens, about 2 minutes.
  4. Hand mash the Potatoes in a bowl or the pot. Season with more Salt and Pepper. Slowly add Gravy 1 cup at a time while whipping the Potatoes with a hand mixer on a medium setting. Add Gravy until the Potatoes are at your preferred consistency.
  5. Save the remaining Gravy to serve on the side and ENJOY!!
