Vegan Taco Meat (Sofritas)

Chipotle Sofritas are made with Tofu, but this Perfectly Imperfect recipe uses plant-based Ground Meat instead. It has a delicious flavor and texture to put in any taco, burrito, or Mexican Bowl of your choice!!


PREP TIME: < 5 minutes

COOK TIME: 10 minutes

SERVINGS: 4

ingredients

  • 2 TBSP Avocado Oil (or high heat oil of your choice)
  • 1/2 lb Plant-Based Ground Meat or Sausage
  • 2 TSPĀ Taco Seasoning
  • 1 Onion (chopped)
  • 1 Bell Pepper (chopped)
  • Salt and Pepper to taste
  • Cilantro to garnish

instructions

  1. Heat 1 TBSP Oil in a large pan over medium-high heat. Add Ground Meat and Taco Seasoning. Brown for about 2-3 minutes. Remove and set aside.
  2. Heat another TBSP of Oil in the same pan over medium heat. Add Onions and Peppers, season with Salt and Pepper, and saute about 3 minutes (or until soft.)
  3. Add the Ground Meat back in the pan with the Onions and Peppers. Saute another 2-3 minutes. Adjust seasoning if necessary.
  4. Garnish with Cilantro, serve and ENJOY!!
