This recipe is light, super healthy, and full of flavor! The Perfectly Imperfect Marinade/Dressing is my absolute favorite. I use it on everything I can, and I know you will love it too!! You can build the salad really anyway you like and use my ingredients as suggestions: make it with Shrimp or Scallops, add Cashews or Peanuts for added crunch. As long as you have the basics, you’ll be serving this up over and over again any way you like!
PREP TIME: 15 minutes
COOK TIME: 1 minute
SERVINGS: 2-3
ingredients
- 2 Ahi Tuna Steaks (cut into small cubes)*
Marinade/Dressing
- 1/4 cup Soy Sauce
- 1 TBSP Sesame Oil
- 2 TSP Rice Wine Vinegar
- 1 1/2 TSP Fish Sauce
- juice and zest of 1 Lime
Salad
- 2 heads Romaine Lettuce (chopped)
- 2 packages Ramen Noodles (discard the flavoring pack)
- 1 Cucumber (sliced)
- 1 Bell Pepper (chopped)
- 1 Avocado (sliced or cubed)
- 2 Scallions – green parts only (finely chopped)
- Dried Seaweed/Nori (sliced)
- Sesame Seeds or Everything Bagel Seasoning
- handful of Cilantro (optional)
- drizzle of Chili Oil (optional)
instructions
- Make the Marinade. Whisk all ingredients together in a bowl. Separate out 1/4 cup and reserve to dress the salad. Add Tuna to the bowl and stir to coat. Set aside.
- Bring a small pot of water to boil. Add in 1 package of Ramen noodles and turn off heat. Separate with a fork for about 1 minute (or until the noodles are soft.) Rinse with cold water. * Don’t cook the other package – break it into tiny pieces and add directly to the salad for a wonderful crunch!!
- While you are waiting for the water to boil, mix all the Salad ingredients together in a large bowl. When the Noodles are ready add them in.
- Pour Dressing over Salad and toss to combine. Top the Salad with the Tuna and more Sesame Seeds. ENJOY!!
