Avocado and Tuna Salad

published: 5/14/2020

This salad is so tasty and super easy to make! With only a few ingredients it is 100% healthy and ready in no time. It’s Perfectly Imperfect to eat as is, over lettuce, or in a wrap!

PREP TIME: 10 minutes

COOK TIME: 0

SERVINGS: 4+

ingredients

  • 2 Avocados (cut into bite-sized pieces)
  • 1 can Tuna (drained)
  • 1 can Chickpeas (drained and rinsed)
  • 2 large Tomatoes (chopped)
  • 1 Cucumber (chopped)
  • 1-2 Scallions (green parts only – finely chopped)*

Dressing

  • juice of 1 Lemon
  • 1/4 TSP Garlic Powder
  • 1/2 TSP Onion Powder
  • 1/4 cup Extra Virgin Olive Oil
  • handful of chopped fresh Herb of your choice (Cilantro, Basil, Parsley, or Dill)
  • Salt and Pepper to taste

Add Feta, Goat Cheese or Cheddar for extra flavor!

*I cannot tolerate raw onions more and more as I get older so unless I’m cooking them to add to a dish, I always use Scallions. They don’t give me a day’s worth of indigestion! However, if you love raw onions use 1/4-1/2 of a Red Onion instead (I wish I could.)

instructions

  1. Make the dressing. Add Lemon juice, Onion Powder, Garlic Powder and half the Herbs into a small bowl. Then whisk in Oil and Season with Salt and Pepper.
  2. Add salad ingredients (except Scallions if using them) together in a large bowl. Pour in dressing and gently toss. Adjust Seasoning if needed.
  3. Garnish with remaining Herbs and the Scallions. ENJOY!!
