I love this recipe – it is light, nutritious, and absolutely delicious! In 20 minutes you can be enjoying this Perfectly Imperfect dish with 0 guilt and a very happy belly!!
PREP TIME: 5 minutes
COOK TIME: 15-20 minutes
SERVINGS: 4


ingredients
- 1 cup Jasmine Rice
- 2 TBSP Rice Wine Vinegar (or White Vinegar with a TSP of Sugar)
- 3-4 Salmon Fillets
Sauce
- 2 TBSP Mayonnaise
- 2 TSP Soy Sauce
- 1 TSP Sesame Oil
- 1/2 TSP Fish Sauce
- juice of 1/2 Lime
Topping Suggestions
- Avocado (sliced)
- Carrots (shredded or grated)
- Shelled Edamame
- Cucumber (sliced)
- Nori (cut into thin slices)
- Sesame Seeds (or Everything But the Bagel Seasoning!!)
- Pickled Ginger
- Red Cabbage (grated)
- Sriracha or Chili Oil


instructions
- Cook Jasmine Rice according to package (about 15-20 minutes.) Add Rice Wine Vinegar after it’s cooked and fluff with a fork.
- Mix all Sauce ingredients in a bowl and set aside.
- Add 1 TBSP of Cooking Oil (I use Avocado Oil) to a pan over medium-high heat. Sear the Salmon (about 2 minutes per side) or until they are cooked to your preference. Then cut into cubes.
- Add the Salmon cubes into the Sauce and gently mix until the Salmon is completely smothered.
- Make the bowls anyway you like, finish with Sesame Seeds or Seasoning, and ENJOY!!
