Asian Salmon Rice Bowl

I love this recipe – it is light, nutritious, and absolutely delicious! In 20 minutes you can be enjoying this Perfectly Imperfect dish with 0 guilt and a very happy belly!!


PREP TIME: 5 minutes

COOK TIME: 15-20 minutes

SERVINGS: 4

ingredients

  • 1 cup Jasmine Rice
  • 2 TBSP Rice Wine Vinegar (or White Vinegar with a TSP of Sugar)
  • 3-4 Salmon Fillets

Sauce

  • 2 TBSP Mayonnaise
  • 2 TSP Soy Sauce
  • 1 TSP Sesame Oil
  • 1/2 TSP Fish Sauce
  • juice of 1/2 Lime

Topping Suggestions

  • Avocado (sliced)
  • Carrots (shredded or grated)
  • Shelled Edamame
  • Cucumber (sliced)
  • Nori (cut into thin slices)
  • Sesame Seeds (or Everything But the Bagel Seasoning!!)
  • Pickled Ginger
  • Red Cabbage (grated)
  • Sriracha or Chili Oil

instructions

  1. Cook Jasmine Rice according to package (about 15-20 minutes.) Add Rice Wine Vinegar after it’s cooked and fluff with a fork.
  2. Mix all Sauce ingredients in a bowl and set aside.
  3. Add 1 TBSP of Cooking Oil (I use Avocado Oil) to a pan over medium-high heat. Sear the Salmon (about 2 minutes per side) or until they are cooked to your preference. Then cut into cubes.
  4. Add the Salmon cubes into the Sauce and gently mix until the Salmon is completely smothered. 
  5. Make the bowls anyway you like, finish with Sesame Seeds or Seasoning, and ENJOY!!
