Asparagus with Lemon Panko Crumble

Asparagus is one of my favorite vegetables! I prepare it every way from raw to broiled, simply seasoned to covered in sauce. This recipe is Perfectly Imperfect to serve anytime of the year and takes less than 10 minutes to make!


PREP TIME: 5 minutes

COOK TIME: 5 minutes

SERVINGS: 4-6

ingredients

  • 1/2 cup Panko Bread Crumbs
  • 2 Garlic Cloves (grated)
  • 2 TBSP Butter (to make this dish VEGAN use Plant-based butter substitute)
  • Juice 1/2 Lemon
  • 1 TBSP high heat Oil
  • 2 bunches Asparagus (bottoms trimmed)
  • Salt and Pepper to taste

instructions

  1. In a small bowl, combine Panko crumbs, Garlic, Butter, and Lemon. Mix with a spoon or your hands until completely combined.
  2. Heat a large pan over medium high heat and add Oil. 
  3. Add Asparagus to the pan and saute about 5 minutes. Season with Salt and Pepper once the spears begin to soften. Stir every minute to cook evenly.
  4. While the Asparagus is cooking, saute Panko mixture in a small pan over low-medium heat. Keep stirring to prevent burning. Remove from heat once the Panko has evenly toasted.
  5. Top the Asparagus with the Panko Crumble and a pinch more of Salt and Pepper.
  6. ENJOY!!
