Dill Dijon Vinaigrette

This Vinaigrette has a bit of tartness but the flavors are very balanced. It is Perfectly Imperfect to serve with any salad – topped with Chicken to Salmon. It could also be a marinade for any mild, white fish or mixed with Greek Yogurt as a tangy dip for warm Pita or raw vegetables!!

 

PREP TIME: 5 minutes

SERVINGS: Makes about 1/2 cup

ingredients

  • 1/3 cup White Wine Vinegar
  • 1 1/2 TBSP Dijon Mustard
  • juice of 1/2 Lemon
  • 1 TSP dried Dill (or 1-2 TBSP Fresh Dill)
  • 1/2 TSP Garlic Powder
  • 1/4 cup Extra Virgin Olive Oil
  • Salt and Pepper to taste

instructions

  1. Add all ingredients, except EVOO, to a small bowl.
  2. Slowly whisk in EVOO and continue to whisk until the Oil has fully incorporated.
  3. Season with more Salt if needed.
  4. Keep refrigerated in a sealed container for up to 2 weeks.
