This is a wonderful Salmon recipe. It’s filling enough to be served at dinner, but light enough to have for lunch. The flavor combination of the fresh vegetables and lemony Salmon are delicious, and it is Perfectly Imperfect with the Dill Dijon Vinaigrette!!
PREP TIME: 10 minutes
COOK TIME: 15 minutes
SERVINGS: 4
ingredients
1 4oz Filet of Salmon per person
Avocado Oil*
juice of 1 Lemon
1 English Cucumber (thinly sliced)**
2 cups Grape Tomatoes (halved)***
1 lb Asparagus (cut into 1 in. pieces) and blanched****
*I use Avocado Oil as a healthy choice for high heat oils. However, use Canola or Vegetable Oils if that is what you have on hand.
**I prefer English Cucumbers because they are seedless. If you are using a regular Cucumber I recommend using 2 since they are typically smaller.
***I used multi colored Tomatoes because I enjoy the variety of flavors between them in a dish. Any type of Tomato can be used based on your preference.
****To blanch the Asparagus, boil water in a pan. Once boiling heavily season with Salt. Add the Asparagus and boil for 2 minutes. Then remove and place directly into an ice bath.

Cover Broiler pan with Aluminum Foil and place Salmon Skin side up. Place pan under the Broiler about 5 in. away from the flame.
Broil for about 4 minutes. Pullthe pan out and flip the Salmon over. Drizzle with Oil and 1/2 Lemon and seasonwith Salt and Pepper.
Place back under the broiler and cookanother 4 minutes. Squeeze other 1/2 Lemon, remove the skin, and slice.
LaySpinach leaves on a platter. Top with Cucumbers, Tomatoes, Asparagus, and Micro Greens. Season with Salt and Pepper and Salmon.
Toss with Dill Dijon Vinaigrette and ENJOY!!
