Korean BBQ Tacos with Creamy Slaw

Fusion dishes are so tasty and Mexican/Asian Fusion is my favorite. The Korean BBQ flavors marry so well with the tangy slaw, and when you wrap it all up in a warm Corn Tortilla…well…it’s heaven! This Perfectly Imperfect recipe is super easy to make, ready in less than 30 minutes, and can be done a few different ways. I would also suggest making the BBQ meat and serving it over rice with the same toppings for a different type of dish as well!

COOK TIME: 10-15 minutes

ingredients

  • 1 TBSP Avocado Oil*
  • 1 1/2 lbs Ground Pork or Beef**

BBQ Sauce

  • 1/4 cup Ketchup
  • 1/4 cup Oyster Sauce***
  • 1/3 cup Water
  • 2 TBSP Soy Sauce
  • 1 TBSP Rice Wine Vinegar
  • 3 Garlic Cloves (grated)
  • 1 TSP or more Sriracha or Chili Paste****

Side note: I used more than 1.5 lbs of meat with the same amount of sauce which is why it didn’t turn out “saucy.” I changed the amounts after cooking since a saucier dish would be even better. However the flavor was still incredible. Add the sauce a little at a time so it turns out the way you like.

Slaw

  • 1/4 head of Cabbage (shredded)
  • 2 Carrots (shredded)
  • 1/4 cup Mayonnaise
  • 2 TSP Agave or Honey
  • 3 TBSP Apple Cider Vinegar
  • Salt and Pepper to taste

Toppings

  • Chopped Scallions
  • Chopped Cilantro
  • Sliced Lime
  • Sliced Cucumbers
  • Sliced Jalapenos

*Avocado Oil is a healthier alternative to Canola or Vegetable Oils when cooking with high heat, but use whatever you have on hand.

**I actually used Country Style Pork Ribs instead of ground meat. It turned out fantastic! I just learned that you can cube it, cook through, then shred it in a food processor to get a light, non-greasy result. It is definitely a different texture so choose what you think you will like the most.

***Oyster sauce is one of my absolute favorite condiments to add to everything. It gives a wonderful Umami flavor that is irresistible, and not an “oyster” taste at all. Hoisin (Japanese BBQ sauce) can be used as well and will give a sweeter flavor to the sauce.

****This ingredient will give the sauce heat so add as little or as much as you like. I added it at the end so my daughter was able to enjoy this meal as well 🙂

instructions

  1. Mix all ingredients for the Slaw in a large bowl. Keep refrigerated until ready to serve.
  2. Heat Oil in a large pan. Add Ground or Cubed Meat, season with Salt and Pepper to taste, and brown completely (about 10-15 minutes depending on which meat you are using.)
  3. While cooking the meat, make the Sauce. In a bowl, whisk all the Sauce ingredients together until smooth.
  4. Pour the Sauce over the Ground Meat and stir until completely covered.
  5. Garnish with Scallions and Cilantro and serve with Lime.
  6. Build Tacos with Meat, Slaw, Cucumbers, Jalapenos, and more lime. ENJOY!!
