This is a Perfectly Imperfect Summer pasta! It has seasonal vegetables, but also some crispy bacon to amp up the flavor. Keep the dish plant-based with Vegan Bacon or crunchy “bacon” flavored chickpeas to make it even healthier. The dairy-free, creamy avocado sauce is so delicious and can be used with lots of pasta dishes, to top tacos or nachos, or even as a dip…..it’s that good!!
PREP TIME: 5 minute
COOK TIME: 10-15 minutes

ingredients
- 1 lb Pasta of your choice*
- 4 strips Bacon (chopped)**
- 3 good handfuls of Spinach***
- 2 cups Frozen Peas
- 2 cups Tomatoes (chopped)****
- Salt and Pepper to taste
*I think a short pasta works best with this dish, but if you prefer long noodles use those! The fun twisted pasta I used is called Casarecce.
** Substitute plant-based Bacon, add in some Liquid Smoke or vegan Bacon Seasoning to the veggies for that same flavor, or make Bacon flavored Chickpeas – Click here for a recipe!
***I never use frozen spinach but I had some and it was great for this dish (I used 1 package.) If you are using frozen as well, make sure to thaw out completely and squeeze out as much liquid as you can, using in a cloth or dish towel.
****You can use Grape, Cherry, or any kind of Tomato here. I actually used 1 can of diced tomatoes instead of fresh, which is always an option as well.
instructions
- Bring a pot of water to boil. Heavily salt the water and cook Pasta according to packaging and drain. *Save 1/2 cup of the Pasta Water.
- Heat a large pan over medium high heat. Add Bacon and cook until crispy (about 5 minutes.) Set aside on a paper towel to drain excess grease.
- Add Peas, Tomatoes, and Spinach to the same pan. Season with Salt and Pepper and saute for about 3-5 minutes. Remove from heat.
- In a large bowl, mix Avocado Sauce with the Pasta. Pour in Pasta Water, a few Tablespoons at a time, to thin out the sauce to your liking. Stir in the vegetables. Adjust Seasoning if needed.
- Top the Pasta with the Bacon and more Basil if you like. ENJOY!!
