Refried Beans

This is such a super easy and tasty recipe! It can be made vegan as well if you choose, and it is Perfectly Imperfect with only 4 ingredients! Serve it as a side dish, in Tacos/Burritos/Crunch Wraps, or with Tortilla chips for a dip!!


PREP TIME: < 5 minutes

COOK TIME: 15 minutes

SERVINGS: 4

ingredients

  • 2 TBSP Avocado Oil*
  • 2 15oz or 1 30oz can Pinto Beans (drained and rinsed)**
  • 1 TBSPĀ Taco Seasoning
  • 1 – 1 1/4 cups Stock (enough to cover the beans)
  • Salt and Pepper to taste

*Avocado Oil is a healthy alternative to other high heat oils like Canola or Vegetable, but use what you have on hand.

**Us Vegetable Stock to keep this recipe Vegan/Vegetarian, but otherwise you can use Beef, Chicken, or Turkey

instructions

  1. Heat a large pan over medium-high heat. Pour in Oil. Add Beans and saute about 3-5 minutes.
  2. Add Stock, Seasoning and Salt and Pepper. Reduce heat and simmer another 5 minutes.
  3. Mash the Beans using a hand masher until smooth. Continue to cook until all the liquid has absorbed but the Beans don’t dry out (about 5 minutes.)
  4. SERVE AND ENJOY!!

*Top with shredded cheese, chopped onions or scallions, or fresh cilantro.
