Vegan Zuppa Toscana

This is soup recipe is EVERYTHING! It is incredibly delicious, easy to make, and sure to please the whole family. It is Perfectly Imperfect as a Vegan or meaty soup, and either way will be your favorite soup of this season!!


PREP TIME: 10 minutes

COOK TIME: 30-40 minutes

SERVINGS: 6

ingredients

  • 1 lb Beyond Meat Sausages (Sweet or Hot Italian)*
  • Onion (finely chopped)
  • 4 Garlic Cloves (minced)
  • 4 cups Stock**
  • 4 medium-large Red Skin Potatoes (cubed)
  • 1 can Unsweetened Coconut Milk
  • 4 cups Kale (bagged is perfect since it’s already shredded)
  • Salt and Pepper to taste
  • grated Parmesan or Nutritional Yeast (optional)
  • Red Pepper flakes (optional)

*These Vegan sausages are amazing! Even if you aren’t vegan I suggest giving them a try. Not vegan…use regular pork sausages here or even ground meat of your choice. If you do use ground meat, make sure to season it with Sausage spices before cooking (Oregano, Paprika, Onion Powder, Garlic Powder, Fennel Seeds, etc – about 1/2 tsp each)

**Keep it vegan with Vegetable stock, but Turkey or Chicken will be delicious if you choose.

instructions

  1. Cut each Sausage into pieces and add to a hot large pot over medium-high heat.
  2. Cook until brown on both sides (about 5 minutes) then set aside leaving the grease in the pot.
  3. Reduce heat to medium-low and add Onions. Saute until soft (3-5 minutes).
  4. Add Garlic and cook another 1-2 minutes. Season with Salt and Pepper.
  5. Pour in Stock and increase heat to high. Bring to a boil.
  6. Add Potatoes and continue to boil until they are fork tender (about 15 minutes).
  7. Reduce heat to medium and pour in Coconut Milk. Stir to combine. Add Sausage and Kale.
  8. Cook another minute or two until the Kale has wilted and the soup is simmering.
  9. Generously season with Salt and more Pepper.
  10. Finish with Pepper Flakes, Nutritional Yeast and Parmesan (if using).
  11. Serve hot and warm your heart!!
