Vegetable Ramen Stir-Fry

This recipe is so easy and ready in 30 minutes! It’s Perfectly Imperfect with a few packages of Ramen Noodles, your choice of vegetables, and a few basic Asian sauce ingredients! Forget Chinese take-out….you can make a healthier and tastier version from start to finish in less time, right in your own kitchen!!


PREP TIME: 10 minutes

COOK TIME: 20 minutes

SERVINGS: 4

ingredients

  • 2 TBSP Avocado Oil*
  • 1/2 head Broccoli (chopped into small pieces)
  • 1 8oz package Mushrooms (sliced)
  • 1 Bell Pepper (sliced)**
  • 1/2 head Cabbage (shredded)
  • 1 cup Edamame (shelled) or Peas or Green Beans
  • 3 packages Ramen Noodles (dispose of flavor packets)
  • 2 Scallions (green parts only – finely chopped)

Sauce

  • 1/4 cup Soy Sauce
  • 1/2 TBSP Sesame Oil
  • 2 TSP Honey or Agave
  • 2 Garlic Cloves (grated)
  • 1 TBSP Rice Wine Vinegar
  • 1 TBSP Oyster Sauce***
  • 1/2 cup Water
  • 1 TSBP Cornstarch

*I always use Avocado Oil instead of Canola or Vegetable, as a healthier alternative, when cooking with high heat. But, use whatever you have on hand.

**I have been buying the small variety bags of Bell Peppers lately, They are really sweet and so easy to chop up for anything.

***If you are a strict vegetarian or vegan, this can be omitted.

instructions

  1. Heat Oil in large pan over medium-high heat. Add Broccoli, Mushrooms, and Peppers and saute for about 7-10 minutes (or until nicely browned.)
  2. While the vegetables are cooking, mix all sauce ingredients together in a small bowl and set aside.
  3. Bring Water to boil for the Ramen. Cook 1-2 minutes and drain.
  4. Add the Cabbage and Edamame to the vegetables and cook another 2 minutes.
  5. Pour the sauce into the pan and stir. Toss in the Ramen with the vegetables and saute until the sauce has thickened (about 2-3 minutes.)
  6. Top with another 1/2 TSP Sesame Oil and ENJOY!!
