This recipe is a much easier and carb-free way of enjoying the flavors of Sushi! I only used vegetables, but smoked or cooked Salmon, Tuna, and Shrimp would be delicious additions. It is a Perfectly Imperfect salad with its simplicity and available variations!!
PREP TIME: 10 minutes
ingredients
Spinach
Cabbage (shredded)
Romaine Lettuce (chopped)
Scallions (finely chopped)
Cucumber (thinly sliced)
Carrots (grated)
Avocado (cubed)
Sugar Snap Peas
Bell Peppers (minced)
Sesame Seeds
Toasted Seaweed (cut into strips) *bake at 350 degrees for 5 min, flip, cook another 5 min*
Wasabi (optional)
Dressing
3 TBSP Soy Sauce
1 TBSP Sesame Oil
2 TSP Rice Vinegar
juice of 1 Lime
instructions
Add all Salad ingredients together (except Seaweed and Sesame Seeds) in a large bowl.
Add Dressing ingredients together in a small bowl and whisk until combined.
Pour Dressing over Salad and toss until coated.Β
Top with Wasabi, Sesame Seeds, and Seaweed strips. ENJOY!!
