Vegetarian Crunch Wrap

This recipe is my take on a fast-food favorite, only healthy and made from scratch! It is Perfectly Imperfect with the opportunity to really fill it with whatever you like. I did mine vegetarian, but it can easily be done vegan or even traditionally with beef or chicken…it is entirely up to you. And once you see how simple it is to make, you will be serving these up to your family over and over again!!


PREP TIME: 5 minutes

COOK TIME: 15 minutes

SERVINGS: 1 per person

ingredients

  • 1 Large Flour Tortilla
  • 1/4-1/2 cupĀ Refried Beans*
  • 1 Small Corn Tortilla or Tostada**
  • Shredded Lettuce or Cabbage
  • Tomatoes (chopped or sliced)****
  • 1/2 Avocado (sliced or mashed)
  • juice of 1/2 Lime
  • Salt and Pepper to taste
  • Shredded Cheese (optional)*****
  • Fresh Cilantro (optional)
  • Sliced Jalapenos (optional)

*I recommend making the beans ahead of time, otherwise your cook time will be closer to 30 minutes. Also, you can use 1/2 cup of Shredded Chicken, or Ground Beef, or Black beans, etc! Whatever protein you choose.

**You could substitute with 1/2 of a Hard Taco shell or even a few Tortilla Chips or Dorritos, but the Corn tortilla will make it easier to fold.

***Salsa will be great too!

****A Nacho Cheese sauce (Vegan or not) can be used instead of the shredded cheese, but add it before you put on the Corn tortilla!

instructions

  1. Pre-heat your oven to 325 degrees.
  2. Toast the Corn Tortilla over an open flame. Place the Tortilla directly on the burner over medium-high heat. Let it char and crisp about 20-30 seconds per side. (If you don’t have a gas stove, add 1/2 – 1 TSP of high heat oil to a pan over medium-high heat. Add your Tortilla and flip once it begins to bubble and crisp up (20-30 seconds per side.)
  3. Assemble:
    • Flour Tortilla
    • Beans and Cheese
    • Corn Tortilla
    • Cabbage, Tomatoes, etc.
    • Avocado and more shredded cheese if you’re using it
    • Fold in 1 side, turn slightly and fold again, turn slightly and fold again….until all sides are folded. (Use the Avocado and/or Cheese to secure.)
  4. Place the folded side down onto a non-stick baking tray or any oven tray covered with parchment paper of non-stick spray and bake for 5 minutes per side.
  5. Heat 1 TSP of high heat oil (or non-stick cooking spray) in a large pan over medium heat. Cook the Wrap for about 2 minutes per side or until nicely browned.
  6. Cut in half and ENJOY!!

NOTE: When assembling, make sure to not add too much of any ingredient. Otherwise the wrap will not fold in enough to securely close. *If this happens, add another Corn Tortilla to the top and it will seal everything in.

Only use about 1/4 cup of your protein to be able to fill with more toppings, or 1/2 cup and less toppings – your choice!
