This salad is so tasty and super easy to make! With only a few ingredients it is 100% healthy and ready in no time. It’s Perfectly Imperfect to eat as is, over lettuce, or in a wrap!
PREP TIME: 10 minutes

SERVINGS: 4+
ingredients
2 Avocados (cut into bite-sized pieces)
1 can Tuna (drained)
1 can Chickpeas (drained and rinsed)
2 large Tomatoes (chopped)
1 Cucumber (chopped)
1-2 Scallions (green parts only – finely chopped)*
Dressing
juice of 1 Lemon
1/4 TSP Garlic Powder
1/2 TSP Onion Powder
1/4 cup Extra Virgin Olive Oil
handful of chopped fresh Herb of your choice (Cilantro, Basil, Parsley, or Dill)
Salt and Pepper to taste
Add Feta, Goat Cheese or Cheddar for extra flavor!
*I cannot tolerate raw onions more and more as I get older so unless I’m cooking them to add to a dish, I always use Scallions. They don’t give me a day’s worth of indigestion! However, if you love raw onions use 1/4-1/2 of a Red Onion instead (I wish I could.)
instructions
Make the dressing. AddLemon juice, Onion Powder, Garlic Powder and half the Herbs into a small bowl. Then whisk in Oil and Season with Salt and Pepper.
Add salad ingredients (except Scallions if using them) together in a large bowl. Pour in dressing and gently toss. AdjustSeasoning if needed.
Garnish with remaining Herbs and the Scallions. ENJOY!!

It really is! Without mayo and the oil and citrus instead, it will hold up for quite awhile for any summer gathering!
