- Heat Oil in large pan over medium-high heat. Add Peppers and toss to coat. Season with Salt and Pepper and cook for about 10 minutes. Turn Peppers every few minutes to make sure they all blister evenly.
- Add Goat Cheese to the pan in small globs. Toss to coat. Turn off the heat and cover the pan with a lid. Let the Cheese melt for about 2 minutes.
- Add more Salt and Pepper to taste and ENJOY!!
Serving suggestions: As is for a snack, with Flank Steak, or any steak, in tacos, burritos, over nachos, as a burger or pizza topping, or even sauteed with eggs for breakfast!!
