Blistered Shishito Peppers with Goat Cheese

SHISHITO PEPPERS!!! These little guys are amazing. In the past year I have seen them on quite a few restaurant menus as appetizers or side dishes, and after the first time I tried them I was HOOKED! They have so much flavor and super easy to make. These peppers are Perfectly Imperfect even as a snack – leave the stems on and eat them with your hands….my whole family loves them this way!! Never heard of them? Don’t worry. I have found them at Whole Foods, Trader Joes, Aldis, and even our local grocery store 🙂


PREP TIME: 0-5 minutes

COOK TIME: 12 minutes

SERVINGS: 1-3 (depending on whether it’s a side or a snack)

ingredients

  • 2 TBSP Avocado Oil*
  • 1 lb Shishito Peppers (stems cut)
  • 2 oz Goat Cheese (1/2 small log)
  • Salt and Pepper to taste

*I use Avocado Oil as a healthy alternative to other high heat cooking oils like Canola or Vegetable. But use whatever you have on hand.

instructions

  1. Heat Oil in large pan over medium-high heat. Add Peppers and toss to coat. Season with Salt and Pepper and cook for about 10 minutes. Turn Peppers every few minutes to make sure they all blister evenly.
  2. Add Goat Cheese to the pan in small globs. Toss to coat. Turn off the heat and cover the pan with a lid. Let the Cheese melt for about 2 minutes.
  3. Add more Salt and Pepper to taste and ENJOY!!

Serving suggestions: As is for a snack, with Flank Steak, or any steak, in tacos, burritos, over nachos, as a burger or pizza topping, or even sauteed with eggs for breakfast!!
