Vegetarian Burritos

I love a giant burrito…especially from Moe’s! This recipe is super healthy, easy to make, and really delicious. The Perfectly Imperfect flavor combinations and vegan sour cream will satisfy your whole family’s craving for Mexican night!! And if your family enjoys animal proteins feel free to add some to the burritos, but keep the beans – they’re so good for you 🙂


PREP TIME: 5 minutes

COOK TIME: 15 minutes

SERVINGS: 5-6 large burritos

ingredients

  • 1 cup Rice (cooked as instructed on package)*
  • 1/2 cup Stock or Water
  • 1 15 oz can Black Beans (drained and rinsed)
  • 1 1/2-2 cups Corn**
  • 2 TBSP Taco Seasoning
  • 1/2 cup Tomatoes***
  • 1 Avocado (smashed)
  • 1-2 Limes
  • Salt and Pepper to taste
  • Large Flour Tortillas
  • Vegan Sour Cream****
  • large bunch of Cilantro (optional)
  • Salsa (optional)
  • Shredded Cheese (optional)
  • Shredded Lettuce (optional)
  • Jalapeno (optional)
  • Hot Sauce (optional)

*I used white Jasmine Rice since I always have it on hand and it cooks in less than 15 minutes. However, use whatever Rice you like.

**Use frozen or canned Corn. I had some Corn on the Cob in my freezer from the fall that I used instead.

***You can use any kind of Tomato here – canned, Roma, Heirloom, Beefsteak, Vine, or even Cherry or Grape. I used canned, diced Tomatoes since i had a can already.

****If your family is not Vegan, use regular Sour Cream, or omit it altogether if you choose. The Vegan recipe is pretty tasty, however it’s been a very long time since I’ve had real Sour Cream to compare it to 🙂

instructions

  1. Cook Rice.
  2. Heat a large pan over medium-high heat. Pour in Stock. Once it begins to bubble add in the Corn, Beans, Taco Seasoning, and Salt and Pepper. Saute for about 5 minutes or until liquid has evaporated.
  3. Once the rice is done, add in the Tomatoes and juice from 1/2 Lime, and stir to combine.
  4. In a small bowl, add Avocado, juice from 1/2 Lime, and Salt and Pepper. Mix.
  5. Build the Burrito: Tortilla, Rice, Beans/Corn, Cilantro, Avocado, Sour Cream. Fold the bottom over all the toppings tightly, fold in both sides, and roll tightly.
  6. Cut in half and ENJOY!!
