I made this Ranchero Sauce to serve with Tamales I bought from Trader Joe’s (which they sell for less than $4 for 6) but, after eating it, I will be putting it on as many dishes I can! It is Perfectly Imperfect to make with regular Chorizo or your favorite Plant-based sausage. Again, I found this wonderful Vegan Chorizo at Trader Joe’s. Make it mild or spicy, either way will be delicious, and serve it with everything from Tamales and Enchiladas, to Nachos and Chili Cheese Fries – and everything in between!!
*My family is obsessed with Shishito Peppers! They are very mild but have incredible flavor. You can absolutely use Bell Peppers, Anaheims, Poblanos, or Cubanelles instead.

Heat a large pan or pot over medium high heat. Add in Chorizo and sauteuntil fully cooked (about 4-5 minutes.) Remove from pan.
HeatOil in the same pan over medium low heat. Add Onions and saute for about 2 minutes. Then addthe Peppers and cook together for 5 minutes.
Pour in the Tomatoes, Stock, Taco Seasoning, and Chipotles in Adobo. Increase heat to high and bring to a boil. Then reduce heat to low and simmer for 5 minutes.
Using an Emmersion blender, food processor, or regular blender, puree the Sauce until smooth. Addthe Chorizo back in. Stir in the Lime juice and Cilantro.
Serve over Tamales and top with Cheese and more Cilantro. ENJOY!!
